Almost without realizing it, warned by the usual heatwaves, we planted ourselves into the last week of July, already very close to the month most awaited by almost everyone (except for those who don’t vacation in August). To say goodbye to the seventh month of the year, in El Comidista we have put together many fresh recipes with seasonal products that are so appetizing that not even the lack of hunger – a consequence of the summer heat – spoils the desire to cook food. Lots of salads, some cold soups and, in short, dishes without much effort, but which show that in summer you can eat without the two usual recipes.
Monday 18 July
Summertime is salad time – because you don’t like much more – and you no longer know what to prepare them with: add mango to the classic tomato salad and round it off with a few sprouts and the crunchy note of radishes.
PEACH IN WINE
The preparation of this dessert is very similar to the classic and old pears in wine. Tip for making at home: use a fruity white wine that you would drink, as its flavors permeate the peach.
Tuesday 19 July
The aubergine is a good friend of the marinade: this technique allows you to flavor it with the help of spices, other vegetables and oil. The key to looking good? Patience.
SEASONAL FRUIT: WATERMELON
It should have a yellowish smudge where it touched the ground and should “feel hollow” when you tap it with your fingers.
Wednesday July 20th
In this soup, inspired by a dish from the Enigma restaurant, we combine the sweetness of ripe red tomatoes with the tart touch of green. Plus a few toppings to make it all pop.
APRICOT AND KEFIR CREPES
Crepes don’t have to pay homage to gochismo: you can also use fruit for the filling. Here we combine the taste of homemade apricot jam with the acidity of kefir.
Thursday 21st July
It is said that in the 1970s, chef Ramón Roteta was the first to stuff piquillo peppers, that tasty variety from Navarra. We made a less stately version than yours with shrimp and hake.
Friday 22 July
Summer tastes like potato salad, even Chanquete knows that. Today we propose a fresh version with cucumber, pickles and hard-boiled egg, with an additional trick to obtain an easily digestible onion.
‘CALABAGUETIS’ WITH SQUID, GARLIC AND CHILLI
A dish from the sea and the garden with all the flavor of squid and the classic Italian “aglio, olio e peperoncino”. And in a light and much cooler version that allows you to enjoy them without having to take a nap afterwards.
Saturday 23rd July
The melon is your friend in summer and it’s assumed to be good if it smells, is heavy, and the base gives a little when you press on it. But it’s not an exact science.
Sunday 24th July
The creamy and sweet and sour aubergines can’t find a better partner than rice with cardamom and coriander seeds (My apologies to those who can’t find these ingredients, but the recipe deserves them).
PAVLOVA CAKE WITH RED FRUITS
According to legend, a confectioner created this cake, inspired by a Russian ballerina. Although it’s not true, this dessert is very tasty and you can also accompany it with chocolate, lemon cream or dulce de leche.
the drink of the weekend
Lemony, drunk cold and a little bit happy: the nectarine is one of the stars of the summer and not only can you eat it, you can also drink it in delicious cocktails like the one we propose today.
