Summer is here, it’s here, it’s here, and cold soups and creams, salads and other fresh dishes are the stars of our tables. You can read about it in our new weekly menu: The classic Cordovan Salmorejo, for example, is not missing, nor is a spicy cucumber appetizer with feta and lime or potatoes seasoned with steamed paprika. All recipes are of course prepared with seasonal products, as required by the law of this section.
Monday June 20th
A succulent chicken, ideally grilled for a smoky touch, and accompanied by a sauce with spicy, sweet and salty notes that complement it perfectly.
Tuesday June 21st
One grows above ground, the other below; one is for summer, the other for winter – although we can find them cooked all year round – and both come together to become a refreshing and tasty soup.
SNAILS STUFFED WITH RICOTA BASIL
This pasta salad has a lot more of the former than the latter and will delight basil lovers thanks to a tasty (and very green) ricotta.
SEASONAL FRUIT: WATERMELON
It should have a yellowish smudge where it touched the ground and should “feel hollow” when you tap it with your fingers.
Wednesday June 22nd
Yoghurt, citrus and spices pair perfectly with pickles, while feta cheese brings the salty touch to a concoction that’s halfway between an appetizer and a salad.
Its glory years may be behind it, but gelatine has all the qualities to be the perfect summer dessert: fresh, light, and, for love, a little bit stale.
Bonito and Paprika were born to be together. We’ll teach you how to combine them in a salad with three versions: for lazy, advanced cooks and insufferable perfectionists.
SEASONAL FRUIT: APRICOT
A relative of the peach and plum, it has very few calories and a good amount of fiber, making it a very filling fruit.
Friday June 24th
If you’ve ever thought of moving to Córdoba just to eat silky, tasty and perfectly seasoned salmorejo every day, there’s no need to pack your bags: here we’ll teach you the basic rules for preparing it.
TUNA WITH ALMOND HUMMUS
This ultra-light fish is a dish that you can also show off on special occasions. It consists of a type of tuna tataki with a different type of hummus/sauce/almond cream. To repeat.
PAVLOVA CAKE WITH RED FRUITS
According to legend, a confectioner created this cake inspired by a Russian ballerina. Although it’s not true, this dessert is very tasty and you can also accompany it with chocolate, lemon cream or dulce de leche.
The traditional version of this Italian dish uses eggplant, but it can also be made with zucchini. And choose whether to fry it, cook it on the grill or add cheese with a more or less intense flavor.

Sunday June 26th
The most addictive Japanese soup has a version that allows you to eat it and live to tell about it on a tropical night. A light broth, pasta and a few other ingredients and you have a well-deserved Domo arigato.
CHOCOLATE BANANA SANDWICH
It’s too late for bikini surgery. We know it, and besides, we don’t believe in it. That’s why we propose this recipe that adores chocolate, cookies and bananas. Without fuss, but also without eating half a kilo.
the drink of the weekend
We flavor the classic tomato juice and vodka cocktail with aromatic herbs, mustard and sherry vinegar and it magically becomes more Mediterranean than Serrat’s Song.
